Cod in the freezer. Onions, potatoes and carrots from Louie’s garden! I was about to ask B if we could go to Walmart to buy some veggies for this recipe that I found in Food.Com, when Louie dropped off his veggies the day before. Don’t you love it when what you need literally falls on your doorstep at the right time?

The carrots were tiny, sweet and reminded me of meals eaten in my childhood. There’s something to be said about vegetables that are organic and free from pesticides.

We ate this chowder with Louie’s Asiago bread (more on the bread in another entry) and white wine. It was delicious! Hope you enjoy it as much as we did!

1/2 lb cod fish fillet
1 tablespoon olive oil
1/2 medium onion, sliced
1/4 cup celery, diced
1 cup raw potatoes, diced
1/4 cup carrot, sliced
1 cup boiling water
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup low fat milk

Cut the cod fillets into bite size pieces. Pour some olive oil into a pan and saute the onions and celery until the onion is tender and translucent. Add the potatoes, carrots, water, salt and pepper.

Cover and simmer for 10 to 15 minutes or until the vegetables are tender. Add the cod and cook for 10 minutes longer. Add the milk and stir for 2 to 3 minutes.
